Garbanzo Bean Summer Salad

Lemony Garbanzo Bean Salad

Let’s face it, its freakin HOT out….the last thing on our mind is cooking anything hot….because, i’ll say it again…IT’S HOT…..This quick, easy garbanzo bean salad recipe is a great way to use up some pantry items and left over corn on the cob! It makes a delicious side salad or even make it a main dish with some pita bread!

Ingredients:

-1 can low sodium garbanzo beans

-1 large ear of grilled corn

-1 avocado

-2 persian cucumbers cut into quarters

-crumbled goat cheese

-salt & pepper

-some lemon zest

-a handful of cilantro

-a few green onions

-a drizzlin’ of champagne vinaigrette

The Process:

1. Mix all ingredients together in a large bowl

2. Serve with Nann/Pita or enjoy seperate
