Holiday Spice Cookies

Ginger Molasses Magic

Christmas mood meets molasses goodness and has a baby with some gingerbread essence…BOOM...best cookie EVER!! Our Holiday Spice Cookies are a seasonal favorite that pack a little punch. If you love gingerbread cookies but crave a softer bite, you’ll love these!

Equipment:

- Cookie sheet

- Parchment paper

-Mixing bowls

-Stand or hand mixer

-Measuring cups + spoons

Ingredients:

  • 1 1/2 sticks unsalted butter, softened to room temperature (not melted*)

  • 1/2 cup granulated (white) sugar

  • 1/2 cup packed brown sugar

  • 1/2 cup unsulphured molasses

  • 1 egg

  • 2 1/4 cups all-purpose flour

  • 2 teaspoons baking soda

  • 1 big tablespoon ground ginger

  • 2 teaspoons ground cinnamon

  • 1 teaspoon ground cloves

  • 1 teaspoon ground nutmeg

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt

The Process:

1. In a medium sized bowl mix all the dry ingredients together, whisk to combine and set aside

2. Cream room temperature butter and sugars with a stand mixer or hand mixer on medium until combined, will be a soft yellow color

3. Add in molasses, egg + vanilla and mix on medium until molasses is incorporated

4. Slowly add flour mixture to wet ingredients, adding a little more each time as you continue to mix

5. Once all ingredients are combined, add to air tight container and refrigerate until dough is chilled (about 2 hours)

6. Preheat oven to 350

7. When you’re ready to bake, roll dough into desired cookie size balls and coat with white sugar

8. Place on a lined cookie sheet and bake for 10-12 minutes or until cookies begin to crack on the top (they will continue to crack as they cool)

9. Transfer to a cooling rack or parchment paper while they rest

10. Eat + Enjoy
